Preparing a Double-Butterflied, Stuffed and Rolled Pork Loin

Butterfly (cut lengthwise almost all the way through) a 3-4 pound boneless loin. Lay open and pat flat. Starting in the center of opened loin, butterfly again on the left side.
Butterfly again on the right hand side, lay open and pat flat. Evenly spread desired dressing (about 11/2 - 2 cups) over loin. Start with the shorter side and roll.
Tie loin securely... ... at 2-3 inch intervals with kitchen twine. Place loin in shallow roasting pan and roast at 350°F. for 1.5 hours, or until internal temperature measures 155°-160°F. on a meat thermometer. Let loin rest 5-10 minutes before slicing to serve, removing twine as necessary.
