Preparing a Double Pocket Chop

Cut a two-inch-thick chop from boneless loin. Butterfly chop... cutting almost through it.
Fold chop back to original shape. Turn chop over to uncut side. On the left side of center, cut a deep pocket.
On the right side of center, cut a deep pocket. Fill each pocket with 2-3 tablespoons of the stuffing of your choice. Open chop up, butterfly-style. Pocket openings will be enclosed in center. Grill, roast or panbroil for 20-25 minutes, turning occasionally.
